VARIETIE: Cima di Melfi.

HARVEST PERIOD: third quarterof October and thefirst quarterof November.

PRODUCTION AREA: company olive groves located in San Vito dei Normanni, Brindisi at approximately 170m above sea level.

GROWING SYSTEM: vase-shaped.

HARVESTING METHD: manual with thè assistance of a vibrating machine; thè olives are placed in boxes of 15 kg.

EXTRACTION TIMINO within 6 hours after harvesting.

EXTRACTION METHOD continuous cold cyde, followed by filtration

STORAGE: stainless Steel containers at 15 degrees. APPEARANC E clear and bright.

COLOUR: green with light golden yellow tones.

SCENT: clear fresh olive fragrance with naturai scents. TOSTE : sweet, with a perfect balance between bitter and spicy. Moderately fruity, delicate taste and fresh fragrance with shades of almond and appiè. PAIRING! red meats, soups, legume soups, sauces, game meats.
